Healthy Blueberry Muffin Recipe: Low in fat and calories, but still great tasting

Healthy Blueberry Muffin
Yield: 12 muffins
Ingredients:
2 egg whites or 1 egg, slightly beaten
1 cup no-fat vanilla yogurt
1/4 cup margarine or butter, softened
1-1/4 cups all-purpose flour
1 cup quick cooking oats
1/2 cup packed brown sugar
2 teaspoons baking powder
1 teaspoon ground cinammon
1/2 teaspoon baking soda
1/4 teaspoon ground nutmeg
1/4 teaspoon salt, if desired
1 cup blueberries
Directions:
Preheat oven to 400 degrees.
1. Line 12 medium muffin cups (2-1/2 x 1-1/2 inches) with paper baking cups or grease bottoms only of muffin cups.
2. Mix all ingredients except blueberries until flour is moistened (batter will be lumpy). Fold in blueberries.
3. Divide batter evenly among muffin cups.
4. Bake 20 to 25 minutes or until golden brown.
5. Immediately remove from pan.
