Blueberry Jelly Recipe: Contributed by Nancy from Dunnellon, Florida

This blueberry jelly recipe is delicious. I've been given several jars in the last few years and everyone in my family loves it. My stepmother Nancy, who is retired in Central Florida, is well known for her baking talents. In retirement, she has picked up the hobby of growing her own blueberries for her desserts and jellies.

She never could get blueberries to flourish in Minnesota, where she lived prior to retiring, but she finds it easy to grow blueberries in Florida. The blueberry varieties she grows in Florida are Emerald, Palmetto and Powder Blue. The climate there allows for the plants to grow almost one foot a year. The blueberry bush in the photo on this page is a new plant just two years old. In a few years, it will be 6 or 7 feet tall. Thanks Nancy for sharing this blueberry jelly recipe!

Blueberry Jelly Recipe

Yield: 6-1/2 cups
Ingredients:

  • 4 level cups blueberries
  • 1 package Jel-ease
  • 5 level cups sugar
  • 2 tablespoons lemon juice

  • Directions:
    1. Wash and drain jars. Immerse in boiling water 10 minutes. Keep hot until filled.
    2. Measure sugar.
    3. Wash and crush ripe blueberries. Put into 6 or 8 quart saucepan. Add lemon juice.
    4. Stir Jel-ease into fruit. Place on heat and bring to a full boil.
    5. Gradually add sugar stirring well. Bring to a full rolling boil.
    6. Start timing and continue boiling for 2 minutes. Remove pan from heat. Quickly remove foam. Immediately pour into hot jars to 1/4 inch from top. Screw lids on tightly. Invert jars on towel for 5 minutes.
    7. Return jars to upright position and let cool undisturbed for 24 hours.
    8. Jam is now complete, ready to serve!
